Full guide to hand-brewed coffee at home: materials, tools and steps detailed explanation
I, required materials
Coffee beans: 15-20 grams of fresh medium-roasted beans (such as Ethiopian and Brazilian beans) are recommended, ground to the size of coarse sugar particles.
Drinking water: 225-230 ml, water temperature controlled at 85-92℃ (90-92℃ for light roasted beans, 83-85℃ for medium-deep roasted beans).
II, essential tools
Bean grinder: manual or electric, the key is to control the coarseness of the grind.
Hand-brewed pot: The slender mouth design makes it easier to control the water flow, and it is recommended to choose a model with temperature control function (such as FELLOW pot).
Filter cup and filter paper: V60 filter cup has a wide adaptability, and it is matched with bleached filter paper to reduce the paper smell.
Sharing pot: The transparent glass pot is convenient for observing the extraction process. The HARIO cloud pot is a classic choice.
Electronic scale + timer: Accurately weigh the coffee powder (15 grams) and the water-to-powder ratio (1:15), and control the extraction time (2-2.5 minutes).
Thermometer: Monitor the water temperature to ensure that it meets the requirements of the bean roasting degree.
III. Operation steps (three-stage water injection method)
1. Preparation stage
Boil water: Heat the water to 90-95℃, let it stand for 1 minute to let the water temperature return to the target range.
Wet the filter paper: Rinse the filter paper with hot water to remove the paper smell and preheat the filter cup and sharing pot.
Pour the coffee powder: Pour the ground coffee powder into the filter cup and shake it gently to make the surface flat.
2. Blooming
Injection: Slowly inject 30 ml of hot water (twice the amount of coffee powder) along the center point to cover all the powder layers.
Waiting: Bloom for 30 seconds and observe the coffee powder swell (fresh beans swell more obviously).
3. Extraction stage
First stage of water injection: Start from the center and pour water in circles to 120 grams, keep the water flow stable and avoid rushing to the edge of the filter paper.
Second stage of water injection: When the water level drops to 1/2, pour water in circles again to a total of 225 grams of water, and the total extraction time is controlled within 2 minutes.
Tips: Keep the water flow height 5-10 cm, and the thickness is uniform to ensure full extraction of flavor.
4. Finished enjoyment
Remove the filter cup: After the coffee liquid is completely dripped into the sharing pot, gently shake it to blend the flavors.
Pour the cup and drink: Pour the coffee into the preheated cup, and you can pair it with milk or directly taste the sour, sweet and bitter layers of black coffee.
IV. Key details
Grinding degree: The size of coarse sugar particles (500-900 microns). Too fine will easily over-extract, and too coarse will have a weak flavor.
Water temperature adjustment: Light roasted beans require high temperature to stimulate acidity, and dark roasted beans require low temperature to avoid burning and bitterness.
Flexible ratio: 1:15-1:16 is the general ratio. If you like strong coffee, you can adjust it to 1:14, and if you like light coffee, you can adjust it to 1:17.
Suggestions for tool and material selection:
Beginners can start with a set (such as Dasheng pour over coffee set), which includes basic tools such as scales, pots, and filter cups.
The filter paper should be rinsed in advance to remove the odor if it is selected in natural wood color, and the bleached one can be used directly.
It is recommended to buy small packages of coffee beans (100-200 grams) and store them in a sealed and dark place after opening.
Through the above steps, you can brew hand-brewed coffee comparable to that of a coffee shop even at home. Try it now!
